Squash Vegetable Spaghetti

Awesome vegetables in the world alert: these are seeds for Spaghetti Squash and they grow into something delicious. Originating in China, this heirloom is known for its unique flesh that separates into long, translucent strings, which resemble pasta. You’ll know it’s ripe when it changes from green to yellow. You’ll know it’s yummy when you cook it and put it in your mouth.

Cooked Spaghetti Squash has a slight crunch with a mild squash flavour, and can be used just like spaghetti – i.e. it’s the perfect way to trick small children into eating veg. Or, you know, adults. Boil the entire squash for about 20 minutes, open it, remove the seeds and fluff out the flesh with a fork. Voila! Banting-friendly “pasta.”
