Squash Summer Melody
This colourful medley includes: Golden Squash (bright yellow with a thin white stripe), Black Squash (actually just very dark green), and Grey Squash (mottled green flecked with grey). The White Bush Scallop, an ancient Native American variety with a scalloped edge, also makes an appearance. And, of course, it wouldn’t be a medley without a Zucchini or two…
Prepare these squash as you normally would. The versatile Zucchini is mild in flavour and can be prepared in sweet or savoury recipes. (Zucchini cake, anyone?) If you don’t mind destroying most of their goodness with boiling oil, deep-fried squash blossoms are extremely tasty!
